  • 450 ml Water
  • 1 lit Pineapple juice
  • 5 Cinnamon sticks, each 50 mm long, broken up
  • 12 Whole cloves
  • 12 Green cardamom, bruised
  • 15 gm Mint leaves, chopped
  • 175 ml Brandy


Put the water, half the pineapple juice, cinnamon, cloves, cardamom and mint into a saucepan. Bring to the boil, cover and simmer for 15 minutes. Remove from the heat, keeping the pan covered, allow to cool.

Strain and add the remaining pineapple juice and brandy. Mix well.
